Saturday: Health and Wellness

I have been talking a lot lately about healthy eating and weight loss. If you go out in public and look around you see this is a serious issue. I do not want to be a health crisis statistic so I am taking control of this in my life.

I am very involved with the Keto Diet only because I have found exciting success with it. It may not be for everyone. I am just trilled to see pounds melt off and my metabolism and energy back.

I do quite a bit of crock-pot cooking because it is easy with my busy life. Last weekend at a discount store I came across a Keto Crock Pot cookbook for $5. I could not pass it up.

I am so excited about the new foods to try. We made Gumbo last night and it was awesome. Today, I am making Boeuf Bourguignon. Which is a dish I have always wanted to prepare. I’m so excited.

I also borrowed my parents Insta-Pot. I am slow to change but I have heard really good things. Last night I used it for the first time. I made Cauliflower Mash to go with tonight’s dinner. It literally cooked in 3 minutes. I spent more time preparing than I did cooking.

I’ll share my recipe here:

1 head Cauliflower
1 cup Chicken Broth
1 Clove Garlic

Place the rack in bottom of pot. Put on the top and steam for 3 minutes
Release steam carefully
Remove top then remove rack.

2 TBSP Butter
2 TBSP Cream Cheese
2 Large spoonfuls of Sour Cream
1 cup shredded Parmesan Cheese
Salt and Pepper to taste

Mix with a hand mixer or immersion blender until they resemble Mashed Potatoes.

These are part of my beef dish for tonight, but I have been very skeptical of cauliflower mash. I love potatoes. I had to taste a little before I put it away for later. I have to say I am really surprised at how good they are. I want to make some more with cheddar, chives and bacon next. Yum.

  1. The cauliflower recipe sounds yummy. I’ve tried the frozen kind and didn’t like it. I may give this a try – I’ve been nervous about using the Insta-Pot – any tips?

  2. Is that the title of the $5.00 cookbook you found? “Keto Crockpot Cookbook” I’d like to find one of those!
